A hearty and comforting one-pot soup featuring kielbasa sausage and potatoes.
Ingredients

- 1 tbsp olive oil
- 1 lb kielbasa, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 lbs potatoes, cubed
- 1 cup carrots, chopped
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup heavy cream
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot.
- Brown the kielbasa.
- Add onion and cook until softened.
- Stir in garlic.
- Pour in chicken broth.
- Add potatoes, carrots, thyme, salt, and pepper.
- Bring to a boil, then simmer until potatoes are tender.
- Stir in heavy cream.
- Heat through, but do not boil.
- Garnish with parsley.
Notes
- Adjust seasonings to your taste.
- You can substitute other vegetables.
- For a thicker soup, mash some of the potatoes.
