Description

A hearty and comforting one-pot soup featuring kielbasa sausage and potatoes.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 lb kielbasa, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 lbs potatoes, cubed
  • 1 cup carrots, chopped
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup heavy cream
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot.
  2. Brown the kielbasa.
  3. Add onion and cook until softened.
  4. Stir in garlic.
  5. Pour in chicken broth.
  6. Add potatoes, carrots, thyme, salt, and pepper.
  7. Bring to a boil, then simmer until potatoes are tender.
  8. Stir in heavy cream.
  9. Heat through, but do not boil.
  10. Garnish with parsley.

Notes

  • Adjust seasonings to your taste.
  • You can substitute other vegetables.
  • For a thicker soup, mash some of the potatoes.
