Description

A comforting and flavorful Creamy Garlic Chicken & Potato Soup, perfect for a chilly evening.


Ingredients

Scale
  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups peeled and cubed potatoes
  • 1 cup chopped carrots
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken and cook until browned.
  3. Add onion and cook until softened.
  4. Stir in garlic and cook for 1 minute.
  5. Pour in chicken broth, add potatoes and carrots.
  6. Bring to a boil, then reduce heat and simmer until potatoes and carrots are tender.
  7. Stir in heavy cream, salt, and pepper.
  8. Heat through, but do not boil.
  9. Garnish with fresh parsley.

Notes

  • Adjust seasonings to your preference.
  • For a thicker soup, mash some of the potatoes.
  • You can use pre-cut vegetables to save time.
