Ingredients

- 2 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 2 cups peeled and cubed potatoes
- 1 cup chopped carrots
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add chicken and cook until browned.
- Add onion and cook until softened.
- Stir in garlic and cook for 1 minute.
- Pour in chicken broth, add potatoes and carrots.
- Bring to a boil, then reduce heat and simmer until potatoes and carrots are tender.
- Stir in heavy cream, salt, and pepper.
- Heat through, but do not boil.
- Garnish with fresh parsley.
Notes
- Adjust seasonings to your preference.
- For a thicker soup, mash some of the potatoes.
- You can use pre-cut vegetables to save time.
