Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup milk or heavy cream
  • 1 cup frozen mixed vegetables
  • Salt and pepper to taste
  • Optional: Fresh parsley, chopped, for garnish


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned.
  3. Add onion and garlic; cook until softened.
  4. Stir in rice and cook for 1 minute.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 15 minutes.
  7. Stir in milk or cream and frozen vegetables.
  8. Season with salt and pepper.
  9. Continue to cook, covered, until rice is tender and liquid is absorbed (about 5-10 minutes).
  10. Garnish with parsley if desired.
  11. Serve immediately.

Notes

  • You can substitute the mixed vegetables with your preferred vegetables.
  • For a thicker sauce, add a tablespoon of cornstarch mixed with a little water at the end.
