- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup milk or heavy cream
- 1 cup frozen mixed vegetables
- Salt and pepper to taste
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned.
- Add onion and garlic; cook until softened.
- Stir in rice and cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Stir in milk or cream and frozen vegetables.
- Season with salt and pepper.
- Continue to cook, covered, until rice is tender and liquid is absorbed (about 5-10 minutes).
- Garnish with parsley if desired.
- Serve immediately.
Notes
- You can substitute the mixed vegetables with your preferred vegetables.
- For a thicker sauce, add a tablespoon of cornstarch mixed with a little water at the end.
