- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup milk
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned.
- Add onion and cook until softened. Add garlic and cook for 1 minute.
- Stir in rice, chicken broth, milk, salt, and pepper.
- Bring to a boil, then reduce heat and simmer, covered, for 15-20 minutes, or until rice is cooked.
- Stir in heavy cream and Parmesan cheese. Cook until heated through.
- Garnish with fresh parsley.
