Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned.
- Add onion and cook until softened.
- Stir in garlic, rice, and chicken broth.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until rice is cooked.
- Stir in heavy cream and Parmesan cheese.
- Season with salt and pepper.
- Garnish with fresh parsley.
