Description

Creamed spinach orzo with chicken is a comforting and easy dinner.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (10 ounce) package frozen spinach, thawed and squeezed dry
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken and cook until browned.
  3. Add onion and garlic; cook until softened.
  4. Stir in spinach, orzo, and chicken broth.
  5. Bring to a boil, then reduce heat and simmer until orzo is cooked.
  6. Stir in heavy cream and Parmesan cheese.
  7. Season with salt and pepper.
  8. Serve hot.

Notes

  • You can substitute the chicken with cooked sausage.
  • Add red pepper flakes for some heat.
  • For a thicker sauce, add a tablespoon of cornstarch.
