A hearty and delicious breakfast casserole perfect for any morning, especially when feeding a crowd. This one-pan dish is easy to make and can even be prepped ahead.

- 1 pound breakfast sausage
- 1 pound ham, diced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried parsley
- 1 teaspoon dried dill
- 1 teaspoon ranch seasoning
- 12 large eggs
- 1 cup milk
- 2 cups shredded cheddar cheese
- 2 cups shredded Monterey Jack cheese
- 1 can (10.5 ounces) condensed cream of mushroom soup
- 1 can (10.5 ounces) condensed cream of chicken soup
- 1 cup crushed Ritz crackers
- 1/2 cup butter, melted
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).
- In a large skillet, cook the breakfast sausage over medium-high heat until browned. Drain off any excess grease.
- Add the diced ham, chopped onion, and chopped green bell pepper to the skillet. Cook until the vegetables are tender, about 5-7 minutes.
- Stir in the garlic powder, salt, black pepper, parsley, dill, and ranch seasoning. Cook for 1 minute more.
- In a large bowl, whisk together the eggs and milk.
- Add the cooked sausage mixture, shredded cheddar cheese, shredded Monterey Jack cheese, cream of mushroom soup, and cream of chicken soup to the egg mixture. Stir until well combined.
- Pour the entire mixture into a greased 9×13 inch baking dish.
- In a small bowl, combine the crushed Ritz crackers and melted butter. Sprinkle this mixture evenly over the top of the casserole.
- Bake for 45-55 minutes, or until the casserole is set and the topping is golden brown.
- Let the casserole stand for 5-10 minutes before serving.
Notes
- This casserole can be assembled the night before and refrigerated. Add an extra 10-15 minutes to the baking time if baking from cold.
- For a quicker version, you can use pre-cooked diced ham and skip browning the sausage if using a pre-cooked sausage crumble.
- Feel free to add other vegetables like mushrooms or jalapeños.
- If you don’t have Ritz crackers, you can use breadcrumbs or crushed croutons for the topping.
- Variations include adding bacon, different cheeses, or using a different condensed soup.
