- 8 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup cooked rice
- 6 large eggs
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 9×13 inch baking dish.
- Spread the cooked bacon, cheddar cheese, Monterey Jack cheese, and cooked rice evenly in the prepared baking dish.
- In a separate bowl, whisk together the eggs, milk, salt, and pepper.
- Pour the egg mixture evenly over the ingredients in the baking dish.
- Bake for 30-35 minutes, or until the casserole is set and lightly golden brown.
- Let stand for 5 minutes before serving.
Notes
- For a spicier casserole, add a pinch of cayenne pepper to the egg mixture.
- You can substitute other cheeses for cheddar or Monterey Jack, such as Swiss or pepper jack.
