Ingredients
- Chicken breasts (4),
- Rice (1 cup),
- Chicken broth (2 cups),
- Onion (1, chopped),
- Garlic (2 cloves, minced),
- Mixed vegetables (1 cup),
- Olive oil (1 tbsp),
- Salt and pepper to taste,
- Italian seasoning (1 tsp),
- Optional: shredded cheese for topping
Instructions
- Preheat your oven to 375°F (190°C).
- In a large oven-safe skillet or baking dish, heat olive oil.
- Season chicken with salt, pepper, and Italian seasoning.
- Sear chicken in the skillet until lightly browned. Remove.
- Add onion and garlic to the skillet; cook until softened.
- Stir in rice and mixed vegetables.
- Pour in chicken broth.
- Return chicken to the skillet.
- Cover and bake for 30-40 minutes, or until rice is cooked and chicken is done.
- Top with cheese (optional) and bake until melted.
Notes
- You can use boneless, skinless chicken thighs instead of breasts.
- Feel free to add other vegetables like carrots or celery.
