Ingredients

  • Chicken breasts (4),
  • Rice (1 cup),
  • Chicken broth (2 cups),
  • Onion (1, chopped),
  • Garlic (2 cloves, minced),
  • Mixed vegetables (1 cup),
  • Olive oil (1 tbsp),
  • Salt and pepper to taste,
  • Italian seasoning (1 tsp),
  • Optional: shredded cheese for topping


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet or baking dish, heat olive oil.
  3. Season chicken with salt, pepper, and Italian seasoning.
  4. Sear chicken in the skillet until lightly browned. Remove.
  5. Add onion and garlic to the skillet; cook until softened.
  6. Stir in rice and mixed vegetables.
  7. Pour in chicken broth.
  8. Return chicken to the skillet.
  9. Cover and bake for 30-40 minutes, or until rice is cooked and chicken is done.
  10. Top with cheese (optional) and bake until melted.
