Ingredients

  • 1 tablespoon olive oil
  • 1 cup wild rice, rinsed
  • 1 cup chopped yellow onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1/2 cup chopped fresh parsley


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add wild rice, onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Pour in vegetable broth and add thyme, rosemary, and black pepper.
  5. Bring to a boil, then reduce heat, cover, and simmer for 45-55 minutes, or until the wild rice is tender.
  6. Season with salt to taste.
  7. Stir in fresh parsley before serving.

Notes

  • For a creamier soup, stir in 1/2 cup of heavy cream or coconut milk during the last 10 minutes of simmering.
  • Add cooked mushrooms or cubed firm tofu for extra protein.
