Description

A comforting casserole with chili, topped with a flavorful cornbread.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can chili beans, undrained
  • 1 (15 ounce) can kidney beans, undrained
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 packet chili seasoning
  • 1 box cornbread mix
  • 1 egg
  • 1/3 cup milk


Instructions

  1. Brown ground beef in a skillet. Drain any grease.
  2. Add onion, bell pepper, and garlic; cook until softened.
  3. Stir in chili beans, kidney beans, diced tomatoes, and chili seasoning. Simmer for 15 minutes.
  4. Prepare cornbread mix according to package directions, using egg and milk.
  5. Pour chili mixture into a baking dish.
  6. Pour cornbread batter over the chili.
  7. Bake at 375°F (190°C) for 25-30 minutes, or until cornbread is golden brown.

Notes

  • You can add cheese on top of the chili before baking.
  • For a spicier chili, add a pinch of cayenne pepper.
  • Serve with your favorite chili toppings.
