Rich and fudgy brownies made with sourdough discard and coconut.
Ingredients

- 1 cup sourdough discard
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup shredded coconut
Instructions
- Preheat oven to 350°F (175°C). Grease and flour an 8Ă8 inch baking pan.
- In a large bowl, whisk together melted butter, granulated sugar, and brown sugar.
- Beat in eggs one at a time, then stir in vanilla extract.
- Add sourdough discard and mix until combined.
- In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Stir in shredded coconut.
- Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Let cool completely before cutting and serving.
Notes
- For a richer flavor, use dark cocoa powder.
- You can add chocolate chips or chopped nuts.
