Description

Simple recipe for classic French Madeleine cookies. These delicate shell-shaped cakes are perfect with tea or coffee.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup (1 stick) unsalted butter, melted and cooled


Instructions

  1. Whisk together flour, baking powder, and salt.
  2. In a separate bowl, whisk eggs and sugar until pale.
  3. Stir in vanilla and melted butter.
  4. Gradually add dry ingredients to wet ingredients.
  5. Refrigerate batter for at least 30 minutes.
  6. Preheat oven to 375°F (190°C). Grease and flour Madeleine molds.
  7. Fill molds 2/3 full.
  8. Bake for 9-12 minutes, until golden brown.
  9. Cool in molds for a few minutes, then transfer to a wire rack.

  • Melt the butter completely, but let it cool before adding.
