Simple recipe for classic French Madeleine cookies. These delicate shell-shaped cakes are perfect with tea or coffee.

- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup (1 stick) unsalted butter, melted and cooled
Instructions
- Whisk together flour, baking powder, and salt.
- In a separate bowl, whisk eggs and sugar until pale.
- Stir in vanilla and melted butter.
- Gradually add dry ingredients to wet ingredients.
- Refrigerate batter for at least 30 minutes.
- Preheat oven to 375°F (190°C). Grease and flour Madeleine molds.
- Fill molds 2/3 full.
- Bake for 9-12 minutes, until golden brown.
- Cool in molds for a few minutes, then transfer to a wire rack.
Notes
- For best results, chill the batter.
- Use a pastry bag or spoon to fill the molds evenly.
- Melt the butter completely, but let it cool before adding.
- Dust with powdered sugar before serving.
