Description

Delicious chocolate tartlets with a rich salted caramel filling.


Ingredients

Scale
  • 12 pre-baked tart shells
  • 1 cup heavy cream
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1 teaspoon sea salt
  • 1/2 cup unsalted butter, cut into cubes
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips


Instructions

  1. In a saucepan, heat heavy cream until simmering.
  2. In a separate saucepan, combine sugar and water. Cook over medium heat, stirring until sugar dissolves.
  3. Continue cooking without stirring until the mixture turns an amber color.
  4. Carefully whisk in the hot cream. The mixture will bubble.
  5. Stir in sea salt and butter until smooth.
  6. Remove from heat and stir in vanilla extract.
  7. Pour caramel over chocolate chips in a bowl. Let sit for 2 minutes, then whisk until smooth.
  8. Fill pre-baked tart shells with the chocolate caramel mixture.
  9. Chill for at least 1 hour before serving.

Notes

  • For a stronger salted caramel flavor, add an extra pinch of sea salt.
  • Ensure your tart shells are fully cooled before filling.
