Delicious chocolate tartlets with a rich salted caramel filling.
Ingredients

- 12 pre-baked tart shells
- 1 cup heavy cream
- 1 cup granulated sugar
- 1/4 cup water
- 1 teaspoon sea salt
- 1/2 cup unsalted butter, cut into cubes
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- In a saucepan, heat heavy cream until simmering.
- In a separate saucepan, combine sugar and water. Cook over medium heat, stirring until sugar dissolves.
- Continue cooking without stirring until the mixture turns an amber color.
- Carefully whisk in the hot cream. The mixture will bubble.
- Stir in sea salt and butter until smooth.
- Remove from heat and stir in vanilla extract.
- Pour caramel over chocolate chips in a bowl. Let sit for 2 minutes, then whisk until smooth.
- Fill pre-baked tart shells with the chocolate caramel mixture.
- Chill for at least 1 hour before serving.
Notes
- For a stronger salted caramel flavor, add an extra pinch of sea salt.
- Ensure your tart shells are fully cooled before filling.
- These tartlets can be made a day in advance.
