Ingredients
- Chicken breasts (6)
- Rice (2 cups)
- Chicken broth (4 cups)
- Onion (1, chopped)
- Garlic (2 cloves, minced)
- Olive oil (2 tbsp)
- Salt and pepper to taste
- Mixed vegetables (1 cup)
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a pan.
- Cook chicken until browned.
- Remove chicken and sauté onion and garlic.
- Add rice and broth.
- Bring to a boil, then simmer.
- Add chicken and vegetables.
- Cook until rice is tender and chicken is cooked through.
- Serve hot.
