Description

A quick and easy chicken fried rice recipe perfect for a weeknight family dinner.


Ingredients

  • Cooked chicken, diced (2 cups)
  • Cooked rice (3 cups)
  • Soy sauce (1/4 cup)
  • Eggs (2, lightly beaten)
  • Frozen mixed vegetables (1 cup)
  • Onion, chopped (1/2)
  • Garlic, minced (2 cloves)
  • Sesame oil (1 tsp)
  • Vegetable oil (2 tbsp)
  • Salt and pepper to taste


Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the chopped onion and cook until softened, about 3 minutes.
  3. Add minced garlic and cook for 1 minute more.
  4. Push the onion and garlic to the side of the skillet. Pour in the beaten eggs and scramble them.
  5. Add the cooked chicken and mixed vegetables to the skillet. Cook for 2-3 minutes, stirring occasionally.
  6. Add the cooked rice and soy sauce to the skillet. Stir well to combine.
  7. Drizzle with sesame oil. Season with salt and pepper to taste.
  8. Cook, stirring frequently, until heated through, about 5 minutes.
  9. Serve immediately.

Notes

  • You can use leftover cooked chicken or rotisserie chicken.
  • Feel free to add other vegetables like peas, carrots, or corn.
  • Adjust the amount of soy sauce to your taste.
