Description

Delicious and easy chicken enchiladas.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound cooked chicken, shredded
  • 1 (10 ounce) can enchilada sauce
  • 10 corn tortillas
  • 2 cups shredded cheddar cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté onion and garlic in olive oil.
  3. Add chicken and 1/2 cup enchilada sauce. Simmer.
  4. Dip tortillas in enchilada sauce.
  5. Fill tortillas with chicken mixture and cheese. Roll up.
  6. Place enchiladas in a baking dish.
  7. Top with remaining enchilada sauce and cheese.
  8. Bake for 20 minutes.
  9. Serve hot.

Notes

  • You can use rotisserie chicken.
  • Add your favorite toppings.
  • For spicier enchiladas, use a hotter enchilada sauce.
