Delicious and easy chicken enchiladas.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound cooked chicken, shredded
- 1 (10 ounce) can enchilada sauce
- 10 corn tortillas
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C).
- Sauté onion and garlic in olive oil.
- Add chicken and 1/2 cup enchilada sauce. Simmer.
- Dip tortillas in enchilada sauce.
- Fill tortillas with chicken mixture and cheese. Roll up.
- Place enchiladas in a baking dish.
- Top with remaining enchilada sauce and cheese.
- Bake for 20 minutes.
- Serve hot.
Notes
- You can use rotisserie chicken.
- Add your favorite toppings.
- For spicier enchiladas, use a hotter enchilada sauce.
