A simple and healthy one-pan chicken and spinach rice skillet.
Ingredients

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- 10 ounces fresh spinach
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned.
- Add onion and cook until softened.
- Stir in garlic, rice, and chicken broth.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in spinach until wilted.
- Season with salt and pepper.
- Cook until rice is tender and liquid is absorbed.
Notes
- You can substitute the chicken with ground turkey or sausage.
- Add other vegetables like bell peppers or mushrooms.
- Garnish with Parmesan cheese.
