Description
A simple and comforting chicken and rice dinner.
Ingredients
- Chicken breasts: 4 (about 6-8 oz each)
- Rice: 2 cups, uncooked
- Chicken broth: 4 cups
- Water: 2 cups
- Onion: 1, chopped
- Garlic: 2 cloves, minced
- Olive oil: 2 tablespoons
- Salt: To taste
- Pepper: To taste
- Optional vegetables: carrots, peas, etc.
Instructions
- Sauté onion and garlic in olive oil until softened.
- Add chicken breasts and cook until browned.
- Pour in chicken broth and water.
- Add rice and any optional vegetables.
- Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer until rice is cooked and chicken is done.
- Shred or slice the chicken and serve.
