Description

A simple and comforting chicken and rice dinner.


Ingredients

  • Chicken breasts: 4 (about 6-8 oz each)
  • Rice: 2 cups, uncooked
  • Chicken broth: 4 cups
  • Water: 2 cups
  • Onion: 1, chopped
  • Garlic: 2 cloves, minced
  • Olive oil: 2 tablespoons
  • Salt: To taste
  • Pepper: To taste
  • Optional vegetables: carrots, peas, etc.


Instructions

  1. Sauté onion and garlic in olive oil until softened.
  2. Add chicken breasts and cook until browned.
  3. Pour in chicken broth and water.
  4. Add rice and any optional vegetables.
  5. Season with salt and pepper.
  6. Bring to a boil, then reduce heat and simmer until rice is cooked and chicken is done.
  7. Shred or slice the chicken and serve.
