Description

Delicious and easy cheesy sweet potato casserole scoops.


Ingredients

  • 2 large sweet potatoes, cooked and mashed
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped chives


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix mashed sweet potatoes, milk, butter, salt, and pepper.
  3. Stir in half of the cheddar cheese.
  4. Spoon mixture into muffin tins.
  5. Top with remaining cheese.
  6. Bake for 20 minutes, or until cheese is melted and bubbly.
  7. Garnish with chives and serve.
