- 2 large sweet potatoes, cooked and mashed
- 1/2 cup milk
- 1/4 cup butter, melted
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/4 cup chopped chives
Instructions
- Preheat your oven to 375°F (190°C).
- Mix mashed sweet potatoes, milk, butter, salt, and pepper.
- Stir in half of the cheddar cheese.
- Spoon mixture into muffin tins.
- Top with remaining cheese.
- Bake for 20 minutes, or until cheese is melted and bubbly.
- Garnish with chives and serve.
Notes
- You can add a sprinkle of paprika for color.
- For extra flavor, use a blend of cheeses.
