A simple and delicious cheesy quesadilla bake perfect for busy weeknights.
Ingredients

- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup water
- 1 (15 ounce) can refried beans
- 8-10 large flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- Optional toppings: sour cream, salsa, guacamole
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef in a skillet. Drain any grease.
- Add taco seasoning and water. Simmer for 5 minutes.
- Spread refried beans in the bottom of a baking dish.
- Layer tortillas over the beans.
- Top with half of the ground beef, then half of the cheddar and Monterey Jack cheeses.
- Repeat layers.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
- Let cool slightly before cutting and serving.
- Add your favorite toppings.
Notes
- You can substitute ground turkey or chicken.
- Add vegetables like onions or peppers to the ground beef.
