- 1 pound ground beef
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
- Add the chopped onion and minced garlic to the skillet with the ground beef. Cook until the onion is softened, about 5 minutes.
- Stir in the diced tomatoes (with their juice), salt, and pepper. Bring to a simmer and cook for 5 minutes.
- Remove the skillet from the heat. Stir in the shredded cheddar cheese and sour cream until well combined and the cheese is melted.
- Pour the mixture into an 8×8 inch baking dish.
- Bake for 15-20 minutes, or until heated through and bubbly.
Notes
- For a spicier casserole, add a pinch of red pepper flakes with the salt and pepper.
- You can substitute the cheddar cheese with your favorite keto-friendly cheese.
