Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese


Instructions

  1. Brown ground beef in a skillet. Drain any excess grease.
  2. Add onion and garlic; cook until softened.
  3. Stir in rice, beef broth, diced tomatoes, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until rice is tender.
  5. Pour mixture into a baking dish.
  6. Top with shredded cheese.
  7. Bake at 375°F (190°C) for 15-20 minutes, or until cheese is melted and bubbly.
