Description

A simple and delicious one-dish meal. This cheesy chicken and rice casserole is perfect for weeknight dinners.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cooked and shredded
  • 1 cup long-grain rice, uncooked
  • 2 cups chicken broth
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 cup milk
  • 1 cup shredded cheddar cheese, plus more for topping
  • 1/2 cup chopped onion
  • 1/4 cup butter, melted
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine rice, chicken broth, cream of chicken soup, milk, onion, and melted butter. Season with salt and pepper.
  3. Stir in cooked chicken and 1 cup of cheddar cheese.
  4. Pour mixture into a greased 9×13 inch baking dish.
  5. Top with remaining cheese.
  6. Bake for 45-50 minutes, or until rice is tender and cheese is melted and bubbly.
  7. Let stand for a few minutes before serving.

Notes

  • You can use rotisserie chicken to save time.
  • Add vegetables like peas or carrots for extra nutrients.
