A simple and delicious one-dish meal. This cheesy chicken and rice casserole is perfect for weeknight dinners.

- 1.5 lbs boneless, skinless chicken breasts, cooked and shredded
- 1 cup long-grain rice, uncooked
- 2 cups chicken broth
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1 cup milk
- 1 cup shredded cheddar cheese, plus more for topping
- 1/2 cup chopped onion
- 1/4 cup butter, melted
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine rice, chicken broth, cream of chicken soup, milk, onion, and melted butter. Season with salt and pepper.
- Stir in cooked chicken and 1 cup of cheddar cheese.
- Pour mixture into a greased 9×13 inch baking dish.
- Top with remaining cheese.
- Bake for 45-50 minutes, or until rice is tender and cheese is melted and bubbly.
- Let stand for a few minutes before serving.
Notes
- You can use rotisserie chicken to save time.
- Add vegetables like peas or carrots for extra nutrients.
