Instructions
- Brown ground beef in a skillet. Drain any grease.

- Pour in beef broth. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15-20 minutes).
- Top with cheese and cook until melted.
- Garnish with chives (optional).
