Description

A hearty ground beef casserole topped with a cheesy cheddar biscuit crust.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) corn, drained
  • 1 cup shredded cheddar cheese
  • 1/2 cup biscuit mix
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup shredded cheddar cheese (for topping)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef and onion. Drain off excess fat.
  3. Stir in diced tomatoes and corn.
  4. Transfer the meat mixture to a 9×13 inch baking dish.
  5. In a small bowl, combine biscuit mix, milk, and egg. Mix until just combined.
  6. Spread the biscuit mixture evenly over the meat mixture.
  7. Sprinkle the remaining cheddar cheese over the biscuit topping.
  8. Bake for 20-25 minutes, or until the topping is golden brown and cooked through.

Notes

  • You can add other vegetables like peas or green beans.
  • For a spicier cobbler, add a pinch of red pepper flakes to the meat mixture.
