A hearty ground beef casserole topped with a cheesy cheddar biscuit crust.

- 1 pound ground beef
- 1 onion, chopped
- 1 can (15 ounces) diced tomatoes, undrained
- 1 can (15 ounces) corn, drained
- 1 cup shredded cheddar cheese
- 1/2 cup biscuit mix
- 1/4 cup milk
- 1 egg
- 1/4 cup shredded cheddar cheese (for topping)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, brown the ground beef and onion. Drain off excess fat.
- Stir in diced tomatoes and corn.
- Transfer the meat mixture to a 9×13 inch baking dish.
- In a small bowl, combine biscuit mix, milk, and egg. Mix until just combined.
- Spread the biscuit mixture evenly over the meat mixture.
- Sprinkle the remaining cheddar cheese over the biscuit topping.
- Bake for 20-25 minutes, or until the topping is golden brown and cooked through.
Notes
- You can add other vegetables like peas or green beans.
- For a spicier cobbler, add a pinch of red pepper flakes to the meat mixture.
