Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts or pecans (optional)
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in egg and vanilla.
  5. Stir in carrots and nuts (if using).
  6. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  7. Press half of the batter into the prepared pan.
  8. In a bowl, beat cream cheese and sugar until smooth.
  9. Beat in egg and vanilla.
  10. Pour cream cheese mixture over the batter in the pan.
  11. Drop remaining batter by spoonfuls over the cream cheese layer.
  12. Swirl gently with a knife.
  13. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  14. Let cool completely before cutting into bars.

  • You can add raisins to the cake batter.
