Description

A flavorful Cajun Chicken Rice Casserole.


Ingredients

  • Chicken breasts (2)
  • Rice (1 cup)
  • Cajun seasoning (2 tbsp)
  • Onion (1, chopped)
  • Bell pepper (1, chopped)
  • Chicken broth (2 cups)
  • Butter (2 tbsp)
  • Shredded cheddar cheese (1 cup)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with Cajun seasoning.
  3. Cook chicken until done. Dice.
  4. Sauté onion and bell pepper.
  5. Add rice and broth. Bring to boil.
  6. Simmer until rice is almost cooked.
  7. Stir in chicken and cheese.
  8. Bake until cheese is melted and bubbly.

  • Adjust Cajun seasoning to your taste.
  • You can add other vegetables.
