Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 cup andouille sausage, sliced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 1/2 cups chicken broth
  • 1 cup uncooked long-grain rice
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)


Instructions

  1. Heat olive oil in a large skillet or pan over medium-high heat.
  2. Add sausage and cook until browned, then remove.
  3. Add shrimp and cook until pink, then remove.
  4. Add bell pepper and onion to the skillet and cook until softened.
  5. Add garlic, Cajun seasoning, smoked paprika, and cayenne pepper (if using). Cook for 1 minute.
  6. Pour in chicken broth and bring to a boil.
  7. Add rice, salt, and pepper. Reduce heat and simmer, covered, for 15-20 minutes, or until rice is cooked.
  8. Stir in sausage and shrimp.
  9. Garnish with green onions.
  10. Serve immediately.
