A flavorful Cajun Shrimp and Rice Skillet, a quick and easy one-pan meal.

- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 cup andouille sausage, sliced
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 1/2 cups chicken broth
- 1 cup uncooked long-grain rice
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet or pan over medium-high heat.
- Add sausage and cook until browned, then remove.
- Add shrimp and cook until pink, then remove.
- Add bell pepper and onion to the skillet and cook until softened.
- Add garlic, Cajun seasoning, smoked paprika, and cayenne pepper (if using). Cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Add rice, salt, and pepper. Reduce heat and simmer, covered, for 15-20 minutes, or until rice is cooked.
- Stir in sausage and shrimp.
- Garnish with green onions.
- Serve immediately.
Notes
- Adjust the amount of cayenne pepper to your spice preference.
- You can add other vegetables, like celery.
- Serve with a side of crusty bread.
