Description

Creamy mac and cheese with a spicy buffalo chicken dip twist.


Ingredients

  • Macaroni: 1 pound
  • Chicken Breast: 2 (cooked and shredded)
  • Buffalo Wing Sauce: 1 cup
  • Cream Cheese: 8 ounces
  • Shredded Cheddar Cheese: 2 cups
  • Shredded Monterey Jack Cheese: 1 cup
  • Butter: 1/4 cup
  • Flour: 1/4 cup
  • Milk: 2 cups
  • Ranch or Blue Cheese Dressing: for garnish
  • Green Onions: for garnish


Instructions

  1. Cook macaroni according to package directions.
  2. Shred cooked chicken.
  3. In a saucepan, melt butter. Whisk in flour.
  4. Gradually whisk in milk until smooth.
  5. Add cream cheese and cook until melted.
  6. Stir in cheddar and Monterey Jack cheese until melted.
  7. Stir in buffalo wing sauce and chicken.
  8. Add cooked macaroni and mix well.
  9. Transfer to a baking dish.
  10. Bake until bubbly.
  11. Garnish with ranch or blue cheese dressing and green onions.

Notes

  • Adjust spice level by adding more or less buffalo sauce.
  • Use rotisserie chicken for convenience.
  • Add a breadcrumb topping for extra crunch.
