Scale
- 1 large head of cauliflower, cut into florets
- 1/2 cup all-purpose flour
- 1/2 cup unsweetened almond milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste

- 2 tablespoons olive oil (or cooking spray)
- Optional: blue cheese or ranch dressing for dipping

Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, whisk together flour, almond milk, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Dip each cauliflower floret into the batter, ensuring it’s fully coated.
- Place the battered florets on a baking sheet lined with parchment paper.
- Drizzle with olive oil or spray with cooking spray.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- In a bowl, toss the baked cauliflower bites with buffalo wing sauce.
- Serve immediately with your favorite dipping sauce and celery.
Notes
- For extra crispiness, don’t overcrowd the baking sheet.
- Adjust the buffalo sauce amount to your spice preference.
- Air frying the cauliflower also works well.
