Description

A delicious and easy cheesy chicken, broccoli, and rice casserole.


Ingredients

Scale
  • 1 cup cooked chicken, shredded
  • 2 cups cooked rice
  • 2 cups broccoli florets, steamed
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese, divided
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine chicken, rice, and broccoli.
  3. In a separate bowl, whisk together soup and milk.
  4. Pour soup mixture over chicken mixture and stir.
  5. Stir in 1/2 cup cheese, salt, and pepper.
  6. Pour into a greased baking dish.
  7. Top with remaining cheese.
  8. Bake for 20-25 minutes, or until cheese is melted and bubbly.

Notes

  • You can substitute cream of chicken soup.
  • Add other vegetables like carrots or peas.
  • Use leftover rotisserie chicken for ease.
