Description

A creamy and comforting soup featuring broccoli and chicken, without cheese.


Ingredients

Scale
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 4 cups broccoli florets
  • 4 cups chicken broth
  • 1 cup milk or cream
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a pot.
  2. Sauté onion until softened. Add garlic and cook briefly.
  3. Add cooked chicken, broccoli, and chicken broth.
  4. Bring to a boil, then reduce heat and simmer until broccoli is tender.
  5. Blend soup until smooth (optional).
  6. Stir in milk or cream. Season with salt and pepper.
  7. Heat through and serve.

Notes

  • Adjust thickness with more or less broth.
  • Garnish with fresh herbs, if desired.
  • For a vegetarian version, omit chicken and use vegetable broth.
