Description
A creamy and comforting soup featuring broccoli and chicken, without cheese.
Ingredients

- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 lb boneless, skinless chicken breasts, cooked and shredded
- 4 cups broccoli florets
- 4 cups chicken broth
- 1 cup milk or cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot.
- Sauté onion until softened. Add garlic and cook briefly.
- Add cooked chicken, broccoli, and chicken broth.
- Bring to a boil, then reduce heat and simmer until broccoli is tender.
- Blend soup until smooth (optional).
- Stir in milk or cream. Season with salt and pepper.
- Heat through and serve.
Notes
- Adjust thickness with more or less broth.
- Garnish with fresh herbs, if desired.
- For a vegetarian version, omit chicken and use vegetable broth.
