Description
A creamy and cheesy soup made with fresh broccoli and sharp cheddar.
Ingredients

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in broccoli florets and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until broccoli is tender.
- Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
- Return the soup to the pot. Stir in heavy cream and cheddar cheese until the cheese is melted and the soup is smooth.
- Season with salt and pepper to taste. Heat through but do not boil.
Notes
- For a thicker soup, use less broth.
- Add a pinch of nutmeg for extra flavor.
- Garnish with extra cheddar cheese or croutons.
