Description

A creamy and cheesy soup made with fresh broccoli and sharp cheddar.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in broccoli florets and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until broccoli is tender.
  4. Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
  5. Return the soup to the pot. Stir in heavy cream and cheddar cheese until the cheese is melted and the soup is smooth.
  6. Season with salt and pepper to taste. Heat through but do not boil.

Notes

  • For a thicker soup, use less broth.
  • Add a pinch of nutmeg for extra flavor.
  • Garnish with extra cheddar cheese or croutons.
