Description
These easy Brie and Cranberry Bites are perfect for any occasion. They combine creamy brie with tart cranberries in a flaky pastry.

- 1 sheet puff pastry, thawed
- 1/4 cup cranberry sauce
- 4 oz brie cheese, cut into small cubes
- 1 egg, beaten (for egg wash)
- 1 tablespoon chopped fresh rosemary (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Unfold the puff pastry sheet on a lightly floured surface. Cut it into 12 equal squares.
- Place a small cube of brie cheese in the center of each pastry square.
- Top the brie with about 1 teaspoon of cranberry sauce.
- Bring the edges of the pastry up and over the filling, pinching to seal and form a small purse or bundle.
- Place the bites on a baking sheet lined with parchment paper.
- Brush the tops of the bites with the beaten egg wash.
- If using, sprinkle with fresh rosemary.
- Bake for 15-20 minutes, or until the pastry is golden brown and puffed.
- Let cool slightly before serving.
Notes
- Ensure the brie is not too melty when cutting.
- Canned or homemade cranberry sauce works well.
- For a sweeter bite, add a drizzle of honey before serving.
