Description
A delicious and easy blueberry dessert.
Ingredients
- Frozen blueberries: 4 cups
- Granulated sugar: 1 cup
- Cornstarch: 4 tablespoons
- Lemon juice: 1 tablespoon
- Vanilla wafers: 1 box (about 14.1 ounces)
- Heavy cream: 2 cups
- Powdered sugar: 2 tablespoons
Instructions
- In a saucepan, combine blueberries, sugar, cornstarch, and lemon juice.
- Cook over medium heat, stirring until the mixture thickens.
- Let the blueberry mixture cool completely.
- Layer vanilla wafers in a dish.
- Top with a layer of the blueberry mixture.
- In a bowl, whip heavy cream and powdered sugar until stiff peaks form.
- Spread whipped cream over the blueberry layer.
- Repeat layers.
- Chill for at least 2 hours before serving.
Notes
- You can use fresh blueberries instead of frozen.
- Adjust the sugar to your taste.
- Other cookies can be used instead of vanilla wafers.
