A delicious and easy Blackberry Cream Cheese Pie.

- 1 (15 ounce) package refrigerated pie crusts
- 8 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 cups fresh blackberries
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- Press one pie crust into a 9-inch pie plate.
- In a bowl, beat cream cheese, 1/2 cup sugar, and vanilla until smooth. Spread over the pie crust.
- In a saucepan, combine blackberries, 1/4 cup sugar, cornstarch, and lemon juice.
- Cook over medium heat, stirring until the berries soften and the sauce thickens.
- Pour blackberry mixture over the cream cheese layer.
- Top with the second pie crust. Cut slits for venting.
- Bake for 40-45 minutes, or until crust is golden brown.
- Let cool completely before serving.
Notes
- You can use store-bought or homemade pie crust.
- For a richer flavor, use full-fat cream cheese.
- Adjust sugar to your taste.
