Ingredients

  • 1 (15 ounce) package refrigerated pie crusts
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 cups fresh blackberries
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice


Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Press one pie crust into a 9-inch pie plate.
  3. In a bowl, beat cream cheese, 1/2 cup sugar, and vanilla until smooth. Spread over the pie crust.
  4. In a saucepan, combine blackberries, 1/4 cup sugar, cornstarch, and lemon juice.
  5. Cook over medium heat, stirring until the berries soften and the sauce thickens.
  6. Pour blackberry mixture over the cream cheese layer.
  7. Top with the second pie crust. Cut slits for venting.
  8. Bake for 40-45 minutes, or until crust is golden brown.
  9. Let cool completely before serving.
