Description
A hearty and flavorful split pea soup made with a ham bone. This recipe is perfect for a comforting meal.
Ingredients

- 1 pound dried green split peas, rinsed
- 1 ham bone (about 1-2 pounds)
- 8 cups water
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- Salt to taste
Instructions
- Combine split peas, ham bone, water, onion, carrots, celery, garlic, thyme, and pepper in a large pot or Dutch oven.
- Bring to a boil, then reduce heat and simmer, covered, for 1.5 to 2 hours, or until peas are tender and ham bone meat is falling off.
- Remove ham bone and shred any meat from it. Discard bone.
- Return shredded meat to the pot.
- Stir well and season with salt to taste.
- Serve hot.
Notes
- For a thicker soup, mash some of the peas against the side of the pot.
- You can add other vegetables like potatoes or parsnips.
- This soup freezes well.
