  • 1 and 1/2 cups chopped pecans, divided
  • 1/2 cup light corn syrup
  • 1/4 cup packed light brown sugar
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, and 3/4 cup brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in 1 teaspoon of vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in 1 cup of the chopped pecans.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  8. In a small saucepan, combine the corn syrup, 1/4 cup brown sugar, and 1 tablespoon butter. Cook over medium heat, stirring constantly, until the butter is melted and the mixture is smooth. Remove from heat and stir in 1/2 teaspoon vanilla extract.
  9. Spoon about 1 teaspoon of the pecan pie filling over the center of each cookie dough ball.
  10. Sprinkle the remaining 1/2 cup chopped pecans over the filling.
  11. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  12. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
