Description

A delightful and easy blueberry French toast casserole, perfect for a special breakfast or brunch. This sweet casserole is packed with fresh blueberries and a rich eggy bread mixture. It can be prepared ahead of time, making your morning stress-free.

Ingredients

Scale
  • 1 loaf (1 pound) day-old bread, cut into 1-inch cubes
  • 4 cups milk
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cups fresh blueberries
  • 1/4 cup butter, melted
  • Optional: Powdered sugar for dusting
  • Optional: Maple syrup for serving

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Spread the bread cubes evenly in the prepared dish.
  3. In a large bowl, whisk together the milk, eggs, granulated sugar, vanilla extract, cinnamon, and nutmeg until well combined.
  4. Pour the egg mixture evenly over the bread cubes, ensuring all pieces are moistened. Gently press down any dry pieces.
  5. Sprinkle the fresh blueberries over the bread mixture.
  6. Drizzle the melted butter over the top.
  7. Cover the dish with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the bread to soak up the mixture.
  8. Preheat your oven to 350°F (175°C).
  9. Remove the plastic wrap and bake for 40-50 minutes, or until the casserole is puffed up, golden brown, and cooked through. A knife inserted into the center should come out clean.
  10. Let the casserole sit for a few minutes before serving.
  11. Dust with powdered sugar and serve warm with maple syrup, if desired.

Notes

  • Using day-old bread is key for the best texture. Fresh bread will become too mushy.
  • For a richer flavor, you can use a combination of milk and heavy cream.
  • If you don’t have fresh blueberries, frozen blueberries can be used, but do not thaw them before adding to the casserole.
  • This casserole can be frozen after baking. Let it cool completely, then wrap tightly. Reheat in a 350°F oven until warmed through.
