A quick and easy deconstructed egg roll. All the flavors of a traditional egg roll, without the wrapper.
Ingredients

- 1 pound ground beef
- 1 tablespoon sesame oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14 ounce) bag coleslaw mix
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- Brown the ground beef in a skillet. Drain any excess grease.
- Add sesame oil, onion, and garlic. Cook until softened.
- Stir in coleslaw mix, soy sauce, rice vinegar, ginger, and garlic powder.
- Cook until the coleslaw has softened, about 5-7 minutes.
- Season with salt and pepper.
- Garnish with chopped green onions.
- Serve immediately.
Notes
- You can add a pinch of red pepper flakes for heat.
- Serve with your favorite toppings like sriracha or sesame seeds.
- This is great for meal prepping.
