Description

A hearty and comforting beef casserole.


Ingredients

Scale
  • 1.5 lbs beef stew meat
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 4 cups beef broth
  • 1 lb potatoes, peeled and cubed
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Season beef with salt and pepper.
  3. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
  4. Brown beef in batches, then remove.
  5. Add onion, carrots, and celery to the pot. Cook until softened.
  6. Add garlic, thyme, and rosemary. Cook for 1 minute.
  7. Return beef to the pot.
  8. Pour in beef broth.
  9. Add potatoes.
  10. Bring to a simmer.
  11. Cover and bake for 2-2.5 hours, or until beef is tender.
  12. Season with salt and pepper to taste.

Notes

  • You can add other vegetables like peas or green beans.
  • Serve with crusty bread.
