A hearty and flavorful beef casserole, perfect for a comforting weeknight meal.
Ingredients

- 1.5 lbs beef stew meat
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 4 cups beef broth
- 1 cup chopped potatoes
- 1 cup frozen peas
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Season beef with salt and pepper.
- Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Sear beef in batches until browned. Remove beef and set aside.
- Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes. Add garlic, thyme, and rosemary; cook for 1 minute more.
- Return beef to the pot. Pour in beef broth.
- Add potatoes. Bring to a simmer.
- Cover and bake for 1.5 hours, or until beef is tender.
- Stir in peas and cook for 10 more minutes.
- Serve hot.
Notes
- You can add other vegetables like mushrooms or parsnips.
- For a thicker sauce, mix a tablespoon of cornstarch with a little cold water and stir it into the casserole during the last 15 minutes of cooking.
