Description

A hearty and flavorful beef casserole, perfect for a comforting weeknight meal.


Ingredients

  • 1.5 lbs beef stew meat
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 4 cups beef broth
  • 1 cup chopped potatoes
  • 1 cup frozen peas
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Season beef with salt and pepper.
  3. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Sear beef in batches until browned. Remove beef and set aside.
  4. Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes. Add garlic, thyme, and rosemary; cook for 1 minute more.
  5. Return beef to the pot. Pour in beef broth.
  6. Add potatoes. Bring to a simmer.
  7. Cover and bake for 1.5 hours, or until beef is tender.
  8. Stir in peas and cook for 10 more minutes.
  9. Serve hot.

Notes

  • You can add other vegetables like mushrooms or parsnips.
  • For a thicker sauce, mix a tablespoon of cornstarch with a little cold water and stir it into the casserole during the last 15 minutes of cooking.
