- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup uncooked rice
- 2 cups beef broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef in a skillet. Drain off any fat.
- Add onion and garlic; cook until softened.
- Stir in rice, beef broth, diced tomatoes, salt, and pepper.
- Pour mixture into a baking dish.
- Cover and bake for 30 minutes.
- Remove cover, sprinkle with cheese, and bake for 10 more minutes.
- Let stand for a few minutes before serving.

- You can substitute ground turkey for ground beef.
- Add vegetables like carrots or peas.
