Description

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef in a skillet. Drain off any fat.
  3. Add onion and garlic; cook until softened.
  4. Stir in rice, beef broth, diced tomatoes, salt, and pepper.
  5. Pour mixture into a baking dish.
  6. Cover and bake for 30 minutes.
  7. Remove cover, sprinkle with cheese, and bake for 10 more minutes.
  8. Let stand for a few minutes before serving.
