Ingredients

- 1 lb boneless, skinless chicken breasts, cooked and shredded
- 1 cup BBQ sauce (low sugar)
- 1 (15 ounce) can corn, drained
- 1 cup cornbread mix (low sugar)
- 1/2 cup milk (or unsweetened almond milk)
- 1 egg
- 1/4 cup shredded cheddar cheese (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Mix shredded chicken and BBQ sauce.
- In a separate bowl, combine cornbread mix, milk, and egg.
- In a greased baking dish, layer chicken mixture, then corn.
- Pour cornbread batter over the top.
- Sprinkle with cheese (optional).
- Bake for 25-30 minutes, or until cornbread is golden brown.
- Let cool slightly before serving.
Notes
- Use low-sugar BBQ sauce for a healthier option.
- Add vegetables like diced bell peppers or onions.
- For a spicier dish, add a pinch of cayenne pepper.
