Delicious and flavorful Bang Bang Chicken Skewers, perfect for grilling or baking.
Ingredients

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 2 tablespoons sriracha, or to taste
- 1 tablespoon rice vinegar
- 1 teaspoon soy sauce
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, soy sauce, garlic powder, and pepper.
- Place chicken cubes in a bowl and pour half of the sauce over them. Toss to coat and marinate for at least 30 minutes.
- Thread chicken onto skewers.
- Preheat grill to medium-high heat or oven to 400°F (200°C).
- If grilling: Grill skewers for 3-4 minutes per side, or until chicken is cooked through. Brush with remaining sauce during the last few minutes.
- If baking: Place skewers on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until chicken is cooked through. Brush with remaining sauce during the last few minutes.
- Serve immediately, garnished as desired.
Notes
- Soaking skewers prevents burning.
- Adjust sriracha to control spiciness.
- Serve with rice, noodles, or a fresh salad.
