- 2 large eggs
- 2 ounces feta cheese
- 1 tablespoon olive oil
- 1/4 cup chopped tomatoes
- 1/4 cup chopped bell pepper
- Salt and pepper to taste
- Fresh oregano for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in an oven-safe skillet.
- Add tomatoes and bell pepper, cook until softened.
- Crumble the feta cheese over the vegetables.
- Crack eggs on top of the feta.
- Season with salt and pepper.
- Bake for 12-15 minutes, or until egg whites are set.
- Garnish with fresh oregano.

- You can add other vegetables like spinach or mushrooms.
