Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup maple syrup
- 1 cup chopped pecans
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, cream together butter and sugars until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla and maple syrup.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in pecans.
- Fill muffin liners about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.
Notes
- You can substitute walnuts for pecans.
- For extra flavor, sprinkle some chopped pecans on top before baking.
- Store muffins in an airtight container at room temperature for up to 3 days.
