Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup maple syrup
  • 1 cup chopped pecans


Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together butter and sugars until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla and maple syrup.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Fold in pecans.
  7. Fill muffin liners about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes

  • You can substitute walnuts for pecans.
  • For extra flavor, sprinkle some chopped pecans on top before baking.
