Ingredients

- 1 lb mixed greens
- 1 cup thinly sliced apples (Fuji or Honeycrisp recommended)
- 1/2 cup crumbled goat cheese
- 1/4 cup toasted walnuts
- 1/4 cup dried cranberries
- For the dressing: 1/4 cup olive oil, 2 tbsp apple cider vinegar, 1 tsp Dijon mustard, 1 tsp honey, salt and pepper to taste
Instructions
- In a large bowl, combine mixed greens, sliced apples, crumbled goat cheese, toasted walnuts, and dried cranberries.
- In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, and honey. Season with salt and pepper.
- Pour the dressing over the salad and toss gently to coat.
- Serve immediately.
Notes
- For a heartier salad, add grilled chicken or tofu.
- Pecans can be used as a substitute for walnuts.
- If you don’t have apple cider vinegar, white wine vinegar can be used.
