Description

Ingredients

  • 1 lb mixed greens
  • 1 cup thinly sliced apples (Fuji or Honeycrisp recommended)
  • 1/2 cup crumbled goat cheese
  • 1/4 cup toasted walnuts
  • 1/4 cup dried cranberries
  • For the dressing: 1/4 cup olive oil, 2 tbsp apple cider vinegar, 1 tsp Dijon mustard, 1 tsp honey, salt and pepper to taste


Instructions

  1. In a large bowl, combine mixed greens, sliced apples, crumbled goat cheese, toasted walnuts, and dried cranberries.
  2. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, and honey. Season with salt and pepper.
  3. Pour the dressing over the salad and toss gently to coat.
  4. Serve immediately.

Notes

  • For a heartier salad, add grilled chicken or tofu.
  • Pecans can be used as a substitute for walnuts.
  • If you don’t have apple cider vinegar, white wine vinegar can be used.
