Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled and diced


Instructions

  1. Preheat oven to 400°F (200°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugars, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk together milk, oil, egg, and vanilla.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Gently fold in diced apples.
  6. Fill muffin liners about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a crumble topping, mix together flour, sugar, and butter and sprinkle over muffins before baking.
  • You can substitute apple pie spice for cinnamon and nutmeg.
  • These muffins are best enjoyed warm.
