- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 2 medium apples, peeled and diced
Instructions
- Preheat oven to 400°F (200°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugars, baking powder, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together milk, oil, egg, and vanilla.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Gently fold in diced apples.
- Fill muffin liners about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a crumble topping, mix together flour, sugar, and butter and sprinkle over muffins before baking.
- You can substitute apple pie spice for cinnamon and nutmeg.
- These muffins are best enjoyed warm.
